This soup is the perfect mix of comfort food meets clean eating. It’s packed with flavour from the green curry paste and nourishing goodness from the broth and veggies. The silken tofu gives it a beautiful creamy texture (without any dairy), and it’s a great source of plant-based protein too.
If you're adding the chicken, you’ll get an extra protein boost to help keep you full and satisfied—perfect for those days when you need something hearty but not heavy.
It’s also a fab way to sneak in extra veggies without even trying. The sugar snap peas and cherry tomatoes stay fresh and vibrant, and the spring onions add just the right bite at the end.

Ingredients
500 ml Natural Chicken Free Range Broth
300g Silken Tofu
50g Green curry paste
500 ml of hot water
200g Sugar snap peas
250g Cherry tomatoes
2 x Spring onions
Optional x 1 Free-range chicken breast
Method
Total time: 30 mins.
Serves 4
Step One: In a large saucepan, over gentle heat, fry the Curry paste to release its flavours for 1-2 minutes.
Step two: Add Broth, silken tofu, and hot water.
Step Three: Bring to a simmer.
Step Four: After 10 minutes use a stick blender to blend the soup.
Step Five: It adding chicken, thinly slice it into small portions and add to the soup base. Simmer for another 10 minutes or until the Chicken is cooked through.
Step Six: Turn the heat off and add thinly sliced vegetables.
Step Seven: Serve into 4 bowls and enjoy! x
