Made with layers of tender aubergine (aka eggplant), organic ground beef, and a creamy, cheesy topping that's secretly packed with cauliflower, ricotta, and nutritional yeast—this dish is big on flavour and protein, without the carb crash.

Low-Carb Lasagne Ingredients
Cheese sauce
1 Medium cauliflower
1 tub ricotta
1/4 cup nutritional yeast
1/2 tsp salt
1/2 tsp pepper
1 tsp smoke paprika
Beef filling.
2tbs Olive oil
4 Onions Finely chopped
2 carrots finely chopped
I pack of chopped frozen spinach or 4 big handfuls of spinach.
half a bulb of garlic crushed
500g Organic beef mince
1 tsp dried thyme
400g tin Crushed tomatoes
4 tbs Tomato paste
Layers
2 large eggplants
1 tub ricotta
Optional - Fresh basil
Method
Total time: 95 mins.
Serves 6
Step One: Pre heat oven to 180 degrees celsius
Step two: In a high speed blender, blitz the cauliflower until it's a small crumb texture (The smaller the better)
Step Three: If you have a Thermomix or similar, keep the cauliflower in the blender, add the tub of ricotta, nutritional yeast, salt, pepper, and paprika. Blend at low speed and cook on a low heat for 15 minutes.
If you don't have a Thermomix, put the cheese sauce topping ingredients in a sauce pan. add 1/4 cup of water and cook over low heat with the lid on for 15 minutes, stirring occasionally. (you may need to ad more water as you go) Once the mixture is cooked through blitz with a stick blender until it's a thick but pourable consistency.
Set aside for later.
Step Four: Add the olive oil, onion, carrot, spinach, garlic and thyme to a large saucepan on a medium heat. Saute for 5 minutes or until softened.
Step Five: Add the Tomato paste and mix together.
Step Six: Add the beef mince and brown for 10 minutes
Step Seven: Add the canned tomatoes, cover and simmer for 20 minutes. Then take the lid off and simmer for another 10 minutes.
Step Eight: Slice the eggplant into 1/2cm think slices length ways.
Step Nine: Cover the base of an oven proof dish with one third of the eggplant slices, top with one third of the meat sauce, then crumble/spread ricotta over the meat sauce. season and sprinkle fresh basil leaves. Repeat two more times. on the top layer use the cheese sauce as the final layer instead of the the plain ricotta mixture. Sprinkle fresh basil leaves on top.
Step Ten: Bake for 45 minutes
Step Eleven: Set aside for 15 minutes before serving.
